ALBERO HIGHBALL
Quintessentially an Amontillado lengthener that emphasizes quality and minerality.
INGREDIENTS

1.5 oz Lustau Los Arcos Amontillado

.5 oz Speyside Scotch (Macallan 15)

1.5 oz Sancerre

1.5 oz sparkling mineral water

3 barspoons Luxardo/Citrus Creme*
DIRECTIONS

Carefully pour Amontillado and Scotch into the Collins glass.

Use tongs to place 6 ice cubes in Collins glass.

Use a barspoon to hold the ice to one side as you pour the Sancerre, then sparkling mineral water avoiding the sides of the glass.

Then, use a barspoon to place 3 heaping barspoons of maraschino/citrus creme on top of the cocktail. Serve on a light-colored linen coaster.
*For the Creme: .75 luxardo, .5 lemon, 4oz creme
Combine in a boston shaker and shake for 45 seconds. Lasts 24 hours.
